Danwake Recipe | How to Prepare Danwake

Danwake is a popular dish in Hausa cuisine, originating from northern Nigeria. It is a type of dough dumpling that is usually served with a delicious tomato stew. This dish is not only delicious but also easy to prepare, making it a great option for those who are new to Hausa cuisine. Here is a step-by-step guide on how to prepare Danwake at home.

Ingredients:

  • 2 cups of all-purpose flour
  • 1 tsp of yeast
  • 1 tsp of sugar
  • 1 tsp of salt
  • 1 cup of warm water
  • 2 tbsp of vegetable oil

For the tomato stew:

  • 2 medium-sized tomatoes
  • 1 large onion
  • 2 medium-sized red bell peppers
  • 2 tbsp of vegetable oil
  • 1 tsp of salt
  • 1 tsp of thyme
  • 1 tsp of ground red pepper (optional)

Instructions:

  1. In a large bowl, combine 2 cups of all-purpose flour, 1 tsp of yeast, 1 tsp of sugar, and 1 tsp of salt.
  2. Gradually add 1 cup of warm water, stirring until the dough comes together. Then, add 2 tbsp of vegetable oil and continue to mix until the dough is soft and smooth.
  3. Cover the bowl with a clean kitchen towel and let the dough rest in a warm place for 30 minutes. This allows the yeast to activate, resulting in a lighter and fluffier dough.
  4. In the meantime, prepare the tomato stew by blending 2 medium-sized tomatoes, 1 large onion, and 2 medium-sized red bell peppers in a blender until smooth.
  5. Heat 2 tbsp of vegetable oil in a large saucepan over medium heat. Add the blended tomato mixture to the saucepan and stir well.
  6. Add 1 tsp of salt, 1 tsp of thyme, and 1 tsp of ground red pepper (optional) to the saucepan and stir well.
  7. Allow the tomato stew to cook for 15 minutes, stirring occasionally, until it has thickened and the oil has separated from the mixture.
  8. After the dough has rested for 30 minutes, divide it into small portions and roll each portion into a ball.
  9. Use a rolling pin to flatten each ball of dough into a round disc. Place a spoonful of the tomato stew in the center of each disc.
  10. Fold the edges of the dough over the tomato stew, sealing it completely.
  11. Place the filled dough balls in a large pot of boiling water and cook for 10 minutes or until they float to the surface.
  12. Remove the Danwake from the pot using a slotted spoon and serve hot with the remaining tomato stew.
